Sharing the Love of the Hudson Valley

I am the owner of Le’ Express Bistro, a modern French-American bistro in Wappingers Falls, which draws its inspiration not only from classic French dishes but also from some of the foods that are the legacy of the former French colonies from around the world. Our goal is to use as many ingredients as possible from our local Hudson Valley and create a special and memorable dining experience.
I am also the owner of the new startup Farmers & Chefs Hudson Valley Food Trucks, which specializes in serving the healthiest, local, in-season, Hudson Valley farm-fresh foods. We participate in local farmers’ markets, fairs and festivals and use ingredients from the farms where each event is being held—my intention being to take the kitchen to the farm!
Recently, I got together with friend Chef John Novi, the former owner of the historic DePuy Canal House Restaurant located in High Falls, NY. It was a wonderful evening that was perfect for steak au piovre and full-bodied glasses of red Bordeaux.
