I am honored to have been asked to do a food article in Organic Hudson Valley. I bought the beautiful Depuy Tavern in 1964 at the age of 22. After studying the history of the house and working in hotels in Italy, I came home to open it as the Depuy Canal House on June 14, 1969. We won numerous high reviews, making the restaurant a truly successful endeavor. Here is a fall-themed soup in the spirit of the Depuy. Fifty-one years and much hard work later, I can now enjoy such a rewarding reputation.
